This Chablis is strikingly brilliant the moment your nose gets near the glass, pure, minerally, almost flinty in character. There’s that rich acid texture that is the true hallmark of this area, and a concentration of fruit that has a lime-like grip. Personally I’d be eating crisps or vege nibbles with this, nothing too posh and let the wine be the star.
